Chocolate recipe of the month
If you've been reaching for the choccies to help you cope with the stress of Christmas during the credit crunch, you're not alone. Around 82% of us rely on comfort food to achieve a quick-fix feel-good factor - and milk chocolate is the nation's favourite stress-busting flavour, according to a recent survey by Aldi (www.aldi.co.uk).
To indulge us further, Aldi has commissioned TV chef Phil Vickery to create this fabulously sweet recipe. 'Cooking with chocolate is great fun and really easy,' he insists. 'This recipe's a great one for the whole family to try over the Christmas holidays.'
Simple bitter chocolate pots with white chocolate sauce
Ingredients (to serve four)
1 pint double cream; 1 tsp coffee granules; pinch of salt; 80g bitter chocolate, chopped; 4 medium egg yolks; 120g granulated sugar
For the sauce: 100g white chocolate; 100ml double cream; bitter chocolate, grated
Method
1. Preheat the oven to 325°C/175°F/Gas Mark 3.
2. Bring the cream, coffee and salt to the boil, then add the chopped chocolate. Remove from the heat and stir until dissolved.
3. Whisk the egg yolks and sugar to bring together.
4. Pour on the chocolate milk and stir well.
5. Pour into four pots. Place pots carefully into a deep baking tray, and half-fill with boiling water. Cover with foil and place in the oven to cook for about 30 minutes, or until just set and wobbly.
6. Remove from the tray to cool, and chill well.
7. To serve, melt the white chocolate over a pan of gently simmering water. Add the cream and stir until smooth and silky.
8. Top with the hot sauce.
